Kaju Uttapam Recipe



Ingredients:

2 cup rice
1 cup urad dal 
2 onions  
2 tomatos 
2 green chillies 
a piece ginger  
1 tsp coriander leaves  
15-16 cashew nuts
1 tsp salt  
oil for cooking

kaju uttapam preparation:
Ø       Soak rice and urad dal separately for about 6 hours.
Ø       Then grind them separately.
Ø       Mix them in a container and add salt.
Ø       Cover and leave for fermentation for 12 hours.
Ø       Finely chop ginger, onion, chillies, tomato and dhania.
Ø       Cut kaju also into pieces.
Ø       Mix red chilles in  batter.
Ø       Heat a non stick pan/tawa and spread 1 tbsp batter on it.
Ø       Spread chopped vegetables and kaju on it.


Ø       Cook at low flame and grease it on the corners and turn it to cook the other side.
Ø       Serve it hot.
Ø       If the batter sticks on a tawa, add little salt to the oil and grease the corners so that uttapam will not stick on tawa.Cook it at low flame to make it tastier.
